Richard,

Hard and soft can have many different meanings...I can think of about 8 off the top of my head. In the context we use it soft is the opposite of hard. If "hard" is fighting then soft skills are the opposite i.e. the skills of avoidance and awareness etc.

Cheese is not hard milk.

My daughter left a little milk on the bottom of her glass and it turned hard.
